    Located at 1,650 meters (5,400 ft) above sea level, the cool climate of Cau Dat slows down the cherry maturation process. This allows the beans to develop a hard, dense structure packed with complex sugars and organic acids.

    • The Result: Beans that can withstand high roasting temperatures, allowing for better heat transfer and a more vibrant flavor development in the drum.

    2. Our Green Bean Portfolio (Processing Methods)

    We understand that every roaster has a specific "house style." Therefore, we offer a diverse range of processing methods to suit your needs:

    A. Fully Washed Arabica

    • The Profile: Clean cup, light body, and bright acidity (reminiscent of citrus or green apple).

    • Best For: Light to Medium roasts, Pour-over, or as a high-quality base for blends to add brightness.

    B. Honey Process Arabica

    • The Profile: Enhanced sweetness, creamy body, and balanced acidity. The mucilage left on the bean during drying imparts a distinct sugary note.

    • Best For: Espresso blends (adds crema and body) or single-origin espresso.

    C. Natural Process Arabica

    • The Profile: Intense, fruit-forward (ripe berries, jackfruit), with winey notes and a heavy body.

    • Best For: Signature roasts, Cold Brew, or adventurous filter coffee.

    3. Technical Specifications (Export Standards)
